Happy Monday…or something like that.  This weekend I wasn’t feeling too fabulous, but it was good nonetheless.  Friday night started with, you guessed it, some pizza and the COUCH!  I think I was asleep by 10 – amen!

Saturday was a pretty productive day – cleaned the house, as well as my car.  I haaate cleaning my car.  I never do, so this was a huge accomplishment.  It looks better than ever!

We had our final wedding of 2010 this weekend.  I think we were up to 5 this year (which doesn’t even come close to competing with last years weddings).  I think we’ve moved on from weddings for a little while and have entered the land of babies.  Oh, and 30th birthdays, but we don’t have to get into that.

The wedding location was pretty cool.  The ceremony was held at a church built in the 1700s.  It was so simple and had so much character.

If you’ve ever caught the Real World – oh how I was obsessed with this show (San Fran and Seattle were the best!) – then you may have watched the one filmed in Philadelphia.  MTV converted an old bank into the house for the cast.  After the show, they turned it into a pretty cool place to have parties and weddings.

Desserts included Key Lime Cheesecake puffs, amazing coconut chocolate lava balls (my own name), chocolate cake and choc. peanut butter candies.


I didn’t take any of myself because I’m still not happy with the idea of being in my glasses all the time.  I know, I know – whiiiine!

Anyway, Sunday was definitely a comfort food day in our house:

Time warp 6 loooong hours….

The meat was so tender, no knife was even needed.

As if that weren’t enough Betty Crocker for you, I made a cake.  I looove strawberry cake!

No, I did not steal a piece.  Ok, I did.

If you’re not in the mood to make your own frosting, may I suggest this.

Crock Pot – Pot Roast



  • 1 yellow onion, finely chopped
  • 4 carrots, peeled and finely chopped
  • 1 lb. red-skinned potatoes, cut into 1/2-inch
  • 1 1/2 cups beef stock
  • 1 cup tomato sauce
  • 1 garlic clove, crushed
  • 3 fresh thyme sprigs
  • 1 bay leaf
  • 1 beef rump roast, 3 to 4 lb.
  • Salt and freshly ground pepper, to taste
  • 1/4 cup all-purpose flour
  • 1 Tbs. extra-virgin olive oil


Put the onion, carrots, potatoes, stock, tomato sauce, garlic, thyme and bay leaf in a slow cooker and stir to combine.

Season the roast with salt and pepper. Put the flour in a large bowl, add the roast and toss to coat evenly.

In a large sauté pan over medium-high heat, warm the olive oil until nearly smoking. Add the roast and brown on all sides, 3 to 4 minutes total. Transfer to the slow cooker, cover and cook on high for 6 hours according to the manufacturer’s instructions.

Transfer the roast to a carving board, cover loosely with aluminum foil and let rest for 5 minutes. Slice the meat and arrange on a warmed platter. Remove the bay leaf and serve the vegetables and sauce alongside.

Well, I’m about to head north on the turnpike towards Scranton – the Land of Michael Scott.  My Mama is having some surgery tomorrow, so I’m going home to be with her.

FRIDAY!  Thank you!

Its finally the weekend.  What are everyone’s plans?  Tonight, I totally plan on being a bum on the couch.  I’m still not feeling 100% and want to take it easy.  We have a wedding tomorrow evening and I’m hoping to be able to make it to at least dinner.

I finally made my way to get my glasses!  Unfortunately, I’m still having issues with my eyes and I’m going to have to lay off the contacts for longer than expected.   After I heard that little piece of news, I got my butt directly to Lenscrafters to check out my Ray Bans!  I probably tried on 30 pairs or so (I was just being thorough!) and ultimately ended up with the frame I went there for in the first place.

The gentleman at the store did bring me another pair that I loved – designed by Tiffany & Co.  They were simple, black plastic frames, but I loved them.  Naturally they were $320, which was $160 more than the Ray Bans.  I told him to take them away from me immediately.  I know if I came home with those glasses, the first thing my husband would say is that I only bought them because they were Tiffany – which would have been absolutely absurd.  So, what do you think???

I haven’t been able to really cook anything in our kitchen because of our busted sink, but we were able to make our Burrito Bowls.  Check ’em out:

We got out of work early today, so naturally I made a beeline for the nail salon to get my nails did.  Lincoln Park AFter Dark, oh how I’ve missed thee.

It was COLD this morning!  I had to turn the heat UP in the car.

I woke up to wonderful surprise:  a scratchy throat and sniffles!  Noooooo….It’s too early in the season for me to get sick!  I normally am lucky enough to get a Christmas cold.  I cannot get sick!  To stifle this cold where it stands, I drank a ton of H2O today and ate as much fruit as I could get my hands on.

Last night’s dinner was kind of random.  Our sink is broken and its a pain in the butt to do the dishes, so I kept it simple.

Yesterday was Flower Day at work in support of the United Way, and I must say, someone’s popular.  😉

Even though they’re carnations, they’re such pretty bright colors.  I love having them in my ‘cube’.

Did anyone watch Glee last night?  I couldn’t figure out the part with the girls making out.  Even as I write this, I still don’t get it.  Favorite song was “Lucky” – no, I am not currently listening to it online!

Modern Family is tonight – luckily we get a nice off from baseball.   We’re having Burrito Bowls for dinner – yes!  I love these!  It’s nothing too fancy and pretty simple, but I’ll post some pictures anyway.  I think I’m finally getting used to taking pictures of EVERYTHING for the blog, so it’s becoming second nature to have a camera in my hands at all times.  I may even start telling friends to check this out.  Am I ready???  Thoughts??

Better Late than Never….

I cannot believe it is October 12 already. This year is absolutely flying by and before you know it there will snow on the ground. I am totally loving the fall weather though. Today, I pulled out my leather boots for the very first time this season. I forgot how cute and comfortable they are! I splurged earlier this year on a pair of gorgeous brown boots, but I have’t had the nerve to wear they yet because I’m terrified they’ll get scratched or something. I’ll wait for the perfect weather conditions before I break those bad boys out.

Anyway, sorry for the lack of posts this weekend! It was a crazy one, albeit fun. Friday night we stayed in to watch the game with some friends. I know this may give you deja vu, however, we ordered pizza again! This time we ordered a Chicken and Ranch pizza too (plus some wings!). I put a little hot sauce on the chicken pizza and it was wonderful!

Saturday, oh Saturday. What can I say about this day? Well, it started off with a visit from our handyman to fix a few things around the house. [Side note: He, in fact, made the problem worse and we currently are unable to use our kitchen sink. Fun, right?] I made PUMPKIN BREAD. Now, I cheated. I’ll admit it. I used a BOX!!! EEK! Although it turned out fabulous. I contemplated tossing in some chocolate chips, but alas, just decided to go the plain route.

It smelled and tasted like heaven.  It was gone by Sunday night.

We then caught up with friends of ours that were putting on a bar crawl in our town. We didn’t want to do the whole ‘crawl’ so we waited until the third stop to join in. I don’t exactly know how it happened [a drink called the Conshy Crush] but somehow the tornado of people picked us up and carried us to 2 more bars! Obviously, totally and completely against our will. The result? I was asleep by 10:00. I was able to salvage some pictures and show you some of the carnage:

Sunday, I had to drag myself out of bed to get to a baby shower for a good friend of mine. I’ll show you some shots:

I came home and collapsed made dinner. Its a quick and easy recipe by yours truly.

Sausage and Diced Tomatoes

Hot Italian Sausage

1 lb Penne Pasta

1 16 oz. can of Diced Tomatoes (with chiles)

1/2 16 oz can of Diced Tomatoes

Shredded Mozzarella



*Cook the pasta according to the instructions

*Saute the sausage in a little water, covered, until brown

*Cut sausage into pieces

*Add the can of tomatoes with chiles and half can of the regular diced. Sprinkle in some salt, pepper and parmesan cheese, if you have. Saute together for about 5 minutes.

*Add the sausage and tomatoes to the pasta and sprinkle with mozzarella.  You may want to add a little EVOO.

*Serve with your favorite RED WINE!

Well, I didn’t end up looking at the Ray Bans like I wanted to, especially with that tornado and everything. I’m hoping to get there one night this week. Tonight, I just had to go to the gym. I could just feel the inches piling on.

Oooey Gooey Cheesey Goodness

I was at work when I received an email from Shopbop about the sale and couldn’t wait to share the news! Obviously, I don’t do any blogging at work, however this was important. I thought my 2 year old Blackberry Curve was going to combust when I hit the Publish button. (Husband – if you are reading, I want the iPhone!!!) I don’t know if you’ve all “bopped” before, but I love shopping there. I can tell you from experience, they have great customer service and an utterly fabulous selection of clothes.  I hope that some of you were able to benefit from the Stopbop Sale. If you got something, I’d love to see it!

I finally got to making Macaroni and Cheese!  I tweaked my own recipe a little bit to make it creamier and I’m very happy with the results….

Macaroni and Cheese

1 pound Elbow Macaroni (Cavatappi is best)

4 tablespoons butter

1/2 cup flour

4 cups Skim Milk (yes, skim!)

1/2 pint of Heavy Cream

2 cups of Gruyere Cheese

1 1/2 cups of Coby Jack

1/4 cup of Mozzarella

1/2 pound Maple Bacon

1/4 teaspoon Cayenne Pepper

Kosher Salt

Italian Style Breadcrumbs

*Cook the bacon in a frying pan, once cooked set aside

* Melt butter in saucepan


Don't you just love the smell of melting butter??


*Stirring constantly, add the flour.

* Once blended, slowly stir in the milk and heavy cream.  Keep stirring….Mixture will thicken after a few minutes.

*Add your cheese, cayenne pepper and kosher salt.

*Stir until all the cheese has melted.  In the meantime, chop the cooked bacon.

*Cook the pasta per the instructions, however, remove from the stove about 2 minutes before completely cooked.  The pasta will finish cooking in the oven.

*Pour into baking dish.  Add the chopped bacon and the cheese mixture.

*Sprinkle the Italian Style Bread Crumbs on top.

*Bake form 25 to 30 minutes at 350.

I dug right in!  No temperature too hot for me!

You could probably use any of your favorite cheeses in this.  OR if you lived in a household where people eat vegetables besides yourself (Sorry babe!), you could even add broccoli.

I hope, if you try this, you enjoy it.

In other news, opinions are needed: I received news yesterday that I cannot wear my contact lenses for an entire week. This was devastating. I have nothing against glasses, per say, just when I have to wear them. They hurt my ears and slide down my nose…ugh. So, in order to make myself feel better, I decided that it may be time to get some new frames! Shopping makes everything better!! Tomorrow I thought I’d go check out these bad boys:

Cheeseburgers and No-hitters

Happy Thursday!  Last night we witnessed a fabulous baseball game.  Now, I am not a huge baseball fan, but I will watch for my husband.  The only time baseball gets exciting, in my opinion, is playoffs!  Lucky for us, the Phillies have been in them for quite a few years now.

We ended up at the Fox & Hound, which is known for getting a huge Philly crowd when there’s a big game on.

It was really nice to watch Roy Halladay’s no-hitter with a restaurant full of people – everyone cheering and going crazy.  Needless to say, I didn’t eat so well yesterday, although it started promising:

I know the container looks big, I assure you my leftover lunch was not THAT much 🙂

I had planned on making the macaroni and cheese last night, but as you know, my plans were derailed.  That’s ok, it was a night off from the cooking – I’ll take that any day.  Instead, I had a wonderful cheeseburger.

This tower was about $20, but it depends what kind of beer you get.  You get around 8 beers out of it and its definitely cooler than just a plain pitcher!

Overall, it was a pretty good night!  Tomorrow I’ll post the Mac-n-Cheese recipe, so be on the lookout.

Before I head out, I know I haven’t been up and running for very long, but I’d love to hear from those who are keeping up with me!
